A few days ago, we introduced the hotel-restaurant Le Chut through a summer chef’s recipe, just to whet your appetite. Today, we are pleased to show you the establishment as a whole, from the terrace to the rooms, with all the novelties and particularities that make this place one of the most beautiful nuggets in the city. Change of owner, new chef, fresh air inside and out, appreciation on the part of the hotel: there has been a change. Today, Chut retains its original DNA, all its charm and that special seal to win over Strasbourg residents in a whole new way. Small tour of the owner.
We are in the heart of the most beautiful neighborhood in the city, Petite France, of course. It is here and more precisely on the rue du Bain-aux-Plantes that we find Le Chut and his new team. Taken over in July 2021 by two Strasbourg residents Philippe Munck and Michael Roumetfor a long time he remained almost too discreet, almost confidential.
But today, the new team is opening the doors, bringing the sun and a breath of fresh air by transforming this place into a more popular, more accessible restaurant, and that obviously doesn’t displease us. While preserving the charm of the past and its own style (without touching the historic buildings), the team wanted to make big changes and a whole new vision on every floor.
A new chef, a new team and a new restaurant idea
Le Chut is a restaurant and guest rooms. In its style, it is unique in Strasbourg and is undoubtedly one of the most charming traditional-style hotel-restaurants in the city. In the kitchen is a young chef in his 30s, Cyril Ponton, a familiar face in Strasbourg catering. Its style is local cuisine, fresh made with products from the market, a cuisine full of colors, full of original flavors.
In each dish, Cyril gives particular importance to the look and whatever dish is brought to him, there will always be a new flavor that appeals to the taste buds. Even if the dish offered to you is a seemingly simple dish, stewed meat or fish, there is always a touch of surprise and that makes all the difference. Between world cuisine and traditional cuisine (French and Alsatian), the chef rocks by offering great classics, often revisited, but also small nuggets that we are not used to seeing like creamed corn or sauerkraut chutney (among others). Its sauces, very strong and always worked, end up making us think that we are dealing with a real cook.
A cocoon of calm and greenery in the heart of the city
When we settle in Chut, we change our universe: we are still in Strasbourg, but the charm of the place takes us to another place. This historic half-timbered building, this terrace overlooking the water, these tall trees and big umbrellas, we are in an exceptional place with a charm that doesn’t come out of any decoration catalogue. The old stones, the vines, that wood that you can almost hear creaking, those beautiful white tablecloths, the whole atmosphere is quite charming, it almost seems that the place has a soul.
But Le Chut is not just a terrace, it is also a pretty patio and two interior rooms, on the ground floor and on the first floor, where you can sit and eat when the weather is less forgiving. In all, there can be at least 80 cutlery and everything is more or less removable, perfect for small discreet dinners or receptions with several people. The people of Strasbourg know very little about this side of the Chut, however, believe me, it’s worth a look, just dare to cross the landing and enter this building as charming as it is steeped in history. .
A restaurant, yes, but a hotel too!
As you can see, Le Chut is also a hotel and as you can imagine, it is unlike any other. In all, guests will be able to find 7 rooms, each with their own fee, their own personality and there also requires a detour. Old house obliges, the wood, the attics, the small windows of the Petite France… More typical and that in every corner. Between elegance, comfort, calm and authenticity, you really want to settle into their rooms just to get a little drunk on the spot before going back to normal life.
Le Chut is, therefore, delicacy, charm, aesthetics and a true signature. In fact, we came here to have fun with the people we love and we always leave with a taste of returning to him on our lips. And for that, Pierette, Flora, Cyril, Céline, Jessica, Philippe and Michael are watching.
